Green Tomato Pie

Green Tomato Pie

2 C. Green Tomatoes, chopped  ( I put mine through a meat grinder                   with a coarse blade) 
¼ tsp Salt

Put in a bowl, stir and let stand for 15-20 minutes.

Make a two-crust pie crust.  Put bottom crust in pie plate.

Drain off liquid from green tomatoes.  Add...
1½ C Sugar
2 Tbsp. Flour
¼ tsp Allspice
¼ tsp Clove
½ tsp Cinnamon
½ tsp. Nutmeg
1 Tbsp Real Lemon Juice or Vinegar

Mix well.  Pour in bottom crust and dot with margarine.  Put on top crust.

Bake at 425° F for 15 minutes.  The lower heat to 400°F for 30 minutes or until crust is golden brown. 

This was a recipe from my Grandmother Everitt.  She passed away in 1977 at the age of 101.  This is a favorite of her kids, grandkids, great-grandkids and great-great-grandkids.  You are not an Everitt unless you like Green Tomato Pie. 

My mother would make 6 pies at a time...that's what fit in the oven...and would freeze them.  Then put them back in the oven at 350°F for 30 minutes for a wonderful, warm pie.
