Sinfully Delicious Pineapple Cake

Grease and Flour a 9 x 13 cake pan
Preheat oven to 350 degrees

1 White Cake Mix
3 eggs
1/4 cup oil
1 21 oz. can pineapple with juice

Dump all ingredients into a large bowl keeping out 1/4 cup of the pineapple and juice. Beat at Medium speed for 3 minutes. Pour into pan and bake 35-40 minutes. This cake will be very moist.
Cool 10 minutes.

Frosting

1 8 ounce brick of Cream Cheese or  Neufachtel cheese softened in the microwave
3 cups powdered sugar
1/4 cup pineapple with juice

Stir all ingredients together until smooth and spread on cake. You may have to add additional powdered suger if the frosting is too thin.

I loooooovvvvveeee pineapple and this does sound sinfully delicious!!!

Yum - Marilyn - what brand of cake mix do you prefer?  Duncan Hines perhaps??  also, are you using the large box of cake mix?

I love the sound of this recipe....pineapple makes it so moist....I'm going to try it for sure...

Judy: Yes Duncan Hines and yes a large one.

Marilyn, I like the sound of this. Packet cake mix., now that's a nice easy one.  I will try BUT is it high in cholesterol? Mine is sky high. Not fair 'cause I am not a fat person and I don't take sugar in my MANY cups of tea., and only skimmed milk.

Blow it anyway, I am going to try this..I enjoyed Etta Sue's Dump  cake so I must try your idea too.

I will refer my doctor to C.P. if he moans at me.

This sounds similiar to my peach (cobbler) upside down cake.  Ya do the same thing with the peaches.  And for that matter, you could use pears instead.  I just wouldn't use all the canned fruits together in one dish, but then again it is up to you what ya want to do.

So, with this in mind you all can make this same recipe above with various kinds of canned fruit.  Even without the above frosting it was a big hit, for some of you who do not want all that.  But if its going to be sinfully delicious, then maybe ya do.

Last night I also added 1 cup of shredded coconut to the the cake and 1/2 cup butter instead of the oil the recipe calls for. Then I spread coconut on the frosting. It sure looks good. Haven't tasted it yet. It is for Christmas Eve
