Peanut Butter Pie

You really need to try this one It is soooo good tasting and also helps your body recover faster.

Peanut Butter Pie

Filling

2 eggs
1 pound tofu
1/4 cup medium unsulfered molasses
3/4 cup peanut butter
1 banana

Crust

1 cup whole wheat pastry flour
1/4 cup extra virgin olive oil (or soy oil)
2 tbls. buttermilk

Place eggs, tofu and molasses in a blender and process on low speed until smooth. Place in a large bowl, blen peanut butter and banana on low speed until smooth. combine thoroughly with tofu mixture.

In a 9 inch (23cm)  pie plate, place the flour, oil and buttermilk. Toss with a fork until combined, then press into the pie plate for crust.

Pour the peanut mixture into the pie crust. Bake in a preheated 350 Degree F. (175 C) oven for 20-25 minutes, until the top is slightly browned.

You can use this crust for almost any one crust pie.

Marilyn - I'm havin touble finding the molasses you mention here.  Can I use any kind?    Whats the difference in unsulferred?

(Ooh - look at the time... I'm going to try and grt some well neede zzz'x.

Judy  the unsulfered molassses is only available at the health food store. I haven't been able to find it inthe regular grocery store either. maybe at one of the suppermarkets that have a health food specialty section would carry it.

You can substitute the unsulfered molasses with honey without any noticible change in the taste.

Most of the "brand names" of molasses are unsulphured.  I don't know if Grandma's or Brer Rabbit are available in Canada, but those are both available here in any grocery store.  I think (but I'm not sure) that if the molasses isn't unsulfured it tastes bitter.
