Sweet Potatoe Fries

Do your kids like French fries? Now there's a trick question!

If so, here's a healthier version to try, courtesy of the CDC's "5 A Day" campaign, aimed at encouraging children to eat their veggies! These fries are not only much lower in fat, they also pack a powerful nutritional punch since sweet potatoes are rich in fiber and vitamins A and C. The best part is that they taste great!

Sweet Potatoe Fries

To make the fries, simply take:

2 medium-sized sweet potatoes, peeled
1 tablespoon of your favorite seasoning — try cinnamon or Chinese five-spice powder, which is available in the Asian section of most supermarkets
1/2 teaspoon of granulated sugar
3/4 cup dipping sauce — try ketchup or plum sauce, perhaps (this is optional)
vegetable oil cooking spray (no more than 1/2 teaspoon)


Making them is easy!

Just cut the sweet potatoes into strips, 3 to 4 inches long and 1/4-inch thick.

Line a baking sheet with aluminum foil, and spread the fries in one layer. Spray lightly with cooking spray.

In a small bowl, stir seasoning and sugar. Sprinkle on the fries, tossing gently.

Bake at 350°F for 45-55 minutes, until the fries are soft. Serve with ketchup or plum sauce for dipping. Enjoy!

I may have to give this a try for the next pot-luck I attend.  Sounds good!

Me too, I do make them fried but  haven't tried in the oven. I would put them int he little toaster oven. They sound good this way.
