Polenta

This is a traditional Italian dish which can be easily combined with any number of vegetables or whatever you might have on hand, and it is inexpensive. I grew up on this as my Step- Father was Italian. It is almost like grits which I also grew up with at my grandmothers house.


Polenta

6 cups water
1 1/2 cups whole grain cornmeal

Bring the water toa boil in a heavy saucepan on high heat. Pour in cornmeal slowly stirring constantly. Do not allow the water to stop boiling as you add the cornmeal.

Reduce heat, and simmer polenta about 20-30 minutes stirring frequently. When it is thickened a wooden spoon should stand upright in the middle, remove from heat. Serve hot with your preferred topping.

We used, grated cheese, spaghetti sauce, gravy, Italian seasoning, zucchini with garlic. We even toppd it like a pizza with sauce and chopped veggies and cheese.

Some or all of the polenta can also be spooned, while still hot, into lightly oiled baking dishes and smoothed with a spoon. Cool and refridgerate.This has to be done while it is hot because of the thickness of the polenta.

To serve cut into oblong cakes and bake or broil until thoroughly heated.We used to fry it in olive oil with salt and pepper, cool it and wrap it in a napkin and eat it on the go. (like a snack).
